<P><STRONG>【制法】:(1)小黃瓜洗淨瀝乾。</STRONG></P>

<P><STRONG>去少量明礬石灰,加水融化後取其澄清液,入鍋上火燒沸,投入小黃瓜略焯即倒出,控乾水分,防一盆內,加鹽15克,醃一天。</STRONG></P>

<P><STRONG>(2)第二天,加入15克鹽,蒜瓣搗爛再加入瓜內拌勻,連菜帶鹵水一同倒入壇內。</STRONG></P>

<P><STRONG>(3)醋入鍋內熬開,加入白酒,然後晾涼倒入瓜壇,浸沒黃瓜。</STRONG></P>
