<P> </P>
<P>公雞生後二、三月，即可閹割。 </P>
<P> </P>閹割之前，自朝至暮，宜先令絕食。
<P> </P>然後緊縛兩翅，置雞身於閹割台上，台以竹木製之，有樞機能固定雞身，使不得動。
<P> </P>乃於其末一肋骨之前，去毛縱剖之，約寸許，取出其腎子，縫其傷口。
<P> </P>釋使安居巢中，越日即如常。
